Unless you're doing this to mirror a Physical Machine for the purpose of testing a real world physical scenario in a virtual environment first, to then apply to the Physical Machine, then frankly it's somewhat senseless to dual-boot a Virtual Machine!
That said if you really want to do it then it is basically no different then if doing in on a Physical Machine so you need to act accordingly! I'd suggest you use Google to research how to dual-boot the OSes you want and then follow the directions while doing it in a Virtual Machine. Note that if the 2 OSes you want to use have different hardware requirements then you may run into issues using a single .vmx configuration file and may need to workaround it with either a secondary .vmx configuration file or some other means.
Hey, thanks! Configuring the guest OS to dual boot is pretty much what I've come to grips with. Is there a way to boot through VMware Player from a USB stick? Otherwise I don't know how to actually get the OS onto the VM.
